Abstract

This thesis consists of two components: a research paper and a cookbook. The research paper focuses on the need for food systems transformation, discusses the role of consumers in the transition to a sustainable and equitable food system, describes potential barriers to behavior change, and considers possible mechanisms to achieve behavior change, primarily through the lens of the Theory of Planned Behavior. In the cookbook preface, there is a brief discussion of how the research in the first part of the thesis informs the creative work. The main goals of the cookbook are to encourage food literacy and serve as a practical tool for consumers navigating the food system that has enough flexibility to adapt to an individual's context.
